This is a recipe for quick vegan cookies, quick to make and quick to eat:)
This recipe is completly mine, Linda luckily forced me to write it down, which was a very good idea becouse I have a good but short memory. In the kitchen I tend to go crazy and it affects writing down my recipies. I’ll try to write it down for you and the future generations 🙂
a small piece of ginger, circa 2 cm
1 lemon ( peel & juice )
about 4 tbsp coconut oil
1,5 cup of flour
a lot of raisins 🙂
2 tbsp agave sirup ( or honey if you’re not vegan )
Grate ginger and lemon peel on small grate ( when you grate the lemon peel be careful not to grate the white stuff becouse it’s bitter and spoils all the fun 🙂 Lemon juice and the rest of the ingredients mix thouroughly together. Form small balls ( you can use the melon spoon or not 🙂 ) or flatten them so that they’ll bake faster.
Bake in 180 *C ( 356 F ) for 15-25 min ( depending on the shape of the cookies ) ’till they’ll golden up.
