PASTA WITH ROASTED PUMPKIN / VEGAN

First we need to prepare the  pumpkin. Pumpkin needs to be peeled, excavated and cut in small pieces, so it will bake quicker. Nicely cut pieces of pumpkin could land in the oven with spices and garlic for 40 min at 180 C ( 356 F ).

Now we may cut the onions, mushrooms and sundried tomatoes. First, fry the spices and onions, after a while, add the mushrooms, tomatoes and roasted pumpkin. I have crushed several pieces of pumpkin with a fork and added it to the sauce to thicken it.

At this moment in the kitchen everything starts to smeel very nice 🙂

A bit of plant based milk and water in which you boiled the pasta, both are adding a nice, creamy consistency to the sauce. Add a bit of parsley and thyme, mix everything with pasta and … ready 🙂 You can gorge 😉

Ingredients for 4 nice portions:

1 pumpkin + – 1 kg

1 big onion

6 dry tomatoes

8 mushrooms

2 tbs almond milk

garlic

salt

pepper

parsley

thyme
