PUMPKIN BUNS / VEGAN

Easy, healthy, delicious and even vegan … yes they are all those things… the incredible  pumpkin buns!

You need to begin with preparing the yeast dough…don’t be scared! It only seems to be difficult. You can buy dry yeast what makes the whole process even easier, you just need to mix it with flour, milk or water, sugar and its ready…tadaaa…easy?…Easy!

But I like to make my life difficult and I am always being real, “living“ yes. It need to be prepared but it is still easy.

For 21 grams of yeast:

1/4 cup of slightly warm water ( or milk, but I don`t like milk)

3 tbsp flour

1 tbs sugar

You just need to mix it, and set it in warm place and let it grow for 20 – 30 minutes.

I am not using eegs while backing ( mostly because you known who ( Linda:)). I discovered that ground linseed is working as good as eggs, so for this buns you need to prepare 1/4 cup of ground linseed mixed with  1/2 cup warm water and wait…it will change into gel.

So for the pastry  you need:

prepared yeast ( or the dry one)

2 1/2 cup flour

ground linseed

1/2 cup water

2 tbsp agave syrup ( of 1/2 cup sugar)

juice and  peel of one lemon

First delicately add and mix yeast with the flour, next are: linseeds, sweets ( syrup or sugar) water and lemon . Mix everything together and don’t be afraid to mix it with your hand…Just give it a little bit of love (and flour if needed). It is a real anti-stres therapy. Mixed dough needs to rest in a bowl, for a good half an hour in a warm place.

Aaaand now the filling… You need to have a nice pumpkin…obviously. If the pumpkin is big you can use only half of it.

nice piece of ginger, circa 2 cm

1 tbsp agave syrup

raisins ( as much as you like)

Just grate pumpkin and ginger and mix them with the rest.

Roll out the pastry  and spread the filling evenly on it. Rewind the pastry with filling  into a roll and cut it in the 2 cm pieces. All the pieces put on the baking tray, leave some distance between the buns because they will grooooow.

Backing : 10 – 15 minutes in 150 Celsius degrees and 25/ 30 minutes in 180 celsius.
